Crab Cakes Preparation

Prepare the Crab Cake Mixture
In a large bowl, combine the lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, chopped green onions, beaten egg, breadcrumbs, salt, and black pepper. Gently mix until all ingredients are well combined without breaking up the crab meat too much.

Form the Cakes
Using your hands, form the mixture into patties, about 3 inches in diameter and 1 inch thick. Place the formed patties on a baking sheet lined with parchment paper.

Chill the Cakes
Cover the baking sheet with plastic wrap and refrigerate the crab cakes for at least 30 minutes to help them hold their shape during cooking.

Cook the Crab Cakes
In a large skillet, heat the oil over medium heat. Once hot, gently add the crab cakes to the skillet in batches (do not overcrowd). Cook for 4-5 minutes on each side or until golden brown and heated through.

Mix the Sauce Ingredients
In a small bowl, combine the mayonnaise, Dijon mustard, hot sauce, chopped capers, lemon juice, garlic powder, and paprika. Mix until smooth and well blended.

Chill the Sauce
Cover the bowl and refrigerate the remoulade sauce for at least 15 minutes to allow the flavors to meld.
