Crust Preparation
Prepare the Crust
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well coated.
Form the Crust
Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form an even layer.
Bake the Crust
Preheat the oven to 350°F (175°C). Bake the crust for about 8-10 minutes or until lightly golden. Remove from the oven and allow to cool.
Filling Preparation
Mix the Filling
In a large mixing bowl, whisk together the key lime juice, sweetened condensed milk, and egg yolks until smooth and well combined.
Pour the Filling
Pour the filling mixture into the cooled crust and spread it evenly.
Bake the Pie
Bake the pie in the preheated oven at 350°F (175°C) for about 15 minutes, until the filling is set but still slightly jiggly in the center. Remove from the oven and let it cool to room temperature. Then refrigerate for at least 3 hours or until chilled.
Topping Preparation
Whip the Cream
In a large mixing bowl, beat the heavy whipping cream and powdered sugar together using an electric mixer until soft peaks form.
Add Lime Zest
Fold in the lime zest gently into the whipped cream.
Top the Pie
Spread the whipped cream mixture over the chilled pie before serving. Optionally, garnish with additional lime zest.
