For the Calamari

Method

Frying the Calamari

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

  2. 2

    Marinate

In a bowl, soak the calamari in buttermilk for at least 30 minutes to enhance tenderness.

  3. 3

    Mix Dry Ingredients

In a separate bowl, combine the flour, cornstarch, salt, black pepper, paprika, and garlic powder.

  4. 4

    Coat the Calamari

Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the rings in the flour mixture until evenly coated.

  5. 5

    Heat the Oil

In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

  6. 6

    Fry the Calamari

Fry the calamari in batches for 2-3 minutes or until golden brown. Do not overcrowd the pot.

  7. 7

    Drain and Serve

Remove the fried calamari with a slotted spoon and drain on paper towels. Serve immediately with lemon wedges and marinara sauce.
