Shrimp Preparation
Cook the Shrimp
In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sauté for about 1 minute until fragrant. Add the shrimp and cook for 2-3 minutes until they turn pink.
Add Wine and Tomatoes
Pour in the white wine and canned diced tomatoes. Season with salt and black pepper. Simmer for about 5-7 minutes until the sauce thickens slightly. Stir in chopped parsley before serving.
Polenta Preparation
Cook the Polenta
In a pot, bring water or broth to a boil. Slowly whisk in the polenta, stirring constantly to prevent lumps. Reduce heat to low and cook, stirring frequently, for about 20-25 minutes until thickened.
Finish the Polenta
Stir in butter, grated Parmesan cheese, and salt to taste. Mix until creamy and well combined.
Serving
Plate the Dish
Serve the shrimp mixture over a bed of polenta. Drizzle with additional sauce if desired and garnish with more fresh parsley.
