Biscuit Cake Ingredients

Method

Biscuit Cake Directions

  1. 1

    Prepare the Biscuit Mixture

Crush the digestive biscuits into fine crumbs using a food processor or by placing them in a ziplock bag and rolling with a rolling pin. In a bowl, combine the crushed biscuits and cocoa powder.

  2. 2

    Melt Butter and Mix

In a saucepan, melt the butter over low heat. Once melted, add the powdered sugar and stir until well combined. Pour this mixture into the biscuit and cocoa mixture and stir to combine.

  3. 3

    Add Milk and Vanilla

Gradually add the milk and vanilla extract to the biscuit mixture, stirring until you have a smooth and thick batter. If desired, fold in the chopped nuts.

  4. 4

    Set the Mixture

Line a rectangular baking dish with parchment paper. Pour the biscuit mixture into the dish and press it down evenly. Refrigerate for at least 2 hours until it sets.

  5. 5

    Prepare Ganache (Optional)

If using chocolate ganache, melt the chocolate in a microwave or over a double boiler. Pour it over the set biscuit cake and spread evenly.

  6. 6

    Serve

Once the ganache has set, cut the biscuit cake into squares or rectangles and serve chilled.
