Tartare Preparation

1. Prepare the Ahi Tuna

Dice the sushi-grade Ahi tuna into small cubes and place in a mixing bowl.

2. Mix the Marinade

In a separate bowl, combine the soy sauce, sesame oil, and chopped candied ginger. Pour this mixture over the diced tuna and gently toss to coat. Set aside to marinate for about 10 minutes.

3. Make the Avocado Puree

In a blender, combine the flesh of the avocado with lime juice and blend until smooth. Season with salt to taste.

4. Prepare the Salad

Thinly slice cucumber and carrot, and mix with finely chopped fennel. Drizzle with a little sesame oil and a pinch of salt, then toss to combine.

5. Serve

On a plate, spread a layer of avocado puree, top with the marinated Ahi tuna, and serve alongside the cucumber and carrot fennel salad.
