Preparation

  1. 1

    Prepare the Salmon

Season the salmon fillets with salt and pepper. Heat a skillet over medium-high heat and add a tablespoon of olive oil. Once hot, add the salmon fillets skin-side down and sear for about 4-5 minutes on each side until cooked through and golden brown. Remove from heat and let rest.

  2. 2

    Make the Salad

In a large bowl, combine the mixed greens, halved cherry tomatoes, dried cranberries, and candied pecans. Toss gently to mix.

  3. 3

    Prepare the Vinaigrette

In a small bowl, whisk together 3 tablespoons of olive oil, 1 tablespoon of balsamic vinegar, and finely chopped fresh basil. Season with salt and pepper to taste.

  4. 4

    Assemble the Salad

Slice the seared salmon into bite-sized pieces. Add the salmon on top of the mixed greens salad. Crumble goat cheese over the top and drizzle with the sweet basil vinaigrette. Serve immediately.
