Prepare the Chicken
Preheat the oven to 400°F (200°C). Season the chicken pieces with salt and black pepper.

Roast the Chicken
Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the internal temperature reaches 165°F (74°C). Remove the chicken and let it rest.

Prepare the Polenta
While the chicken is roasting, bring 4 cups of water to a boil in a saucepan. Slowly whisk in the polenta, stirring constantly to prevent lumps. Cook for about 15-20 minutes until thickened. Season with salt and set aside.

Make the Pan Sauce
In the same skillet used for the chicken, add the remaining olive oil. Sauté the garlic, mushrooms, and sliced sweet peppers for about 5 minutes until softened. Add the diced tomatoes and chicken broth, stirring to combine. Simmer for 5-10 minutes until slightly thickened.

To serve, spoon polenta onto plates, top with the roasted chicken, and drizzle with the mushroom pan sauce. Garnish with chopped fresh basil.
