Rack of Lamb

    Prepare the Lamb

    Preheat the oven to 400°F (200°C). Season the rack of lamb with salt, pepper, minced garlic, and rosemary. Rub with olive oil.

    Roast the Lamb

    Place the seasoned rack of lamb in a roasting pan and roast in the preheated oven for 20-25 minutes for medium-rare. Allow to rest for 10 minutes before slicing.

Ratatouille

    Cook the Vegetables

    In a large skillet, heat olive oil over medium heat. Add onion, bell peppers, and sauté until softened. Add eggplant, zucchini, and tomatoes. Season with salt, pepper, and basil. Cook until the vegetables are tender.

Pesto Yukon Gold Mashed Potatoes

    Boil the Yukon Gold potatoes in salted water until tender. Drain and return to pot. Add butter and heavy cream, and mash until smooth.

Lemon Gastrique

    Make the Gastrique

    In a saucepan, combine sugar, lemon juice, and water. Bring to a boil, then reduce heat and simmer until the mixture thickens slightly, about 10-15 minutes.

Balsamic Reduction

    Prepare the Balsamic Reduction

    In a small saucepan, heat balsamic vinegar over medium heat. Simmer until it reduces to a thicker consistency, about 10-15 minutes.
