Roast the Lamb
Place the seasoned rack of lamb in a roasting pan and roast in the preheated oven for 20-25 minutes for medium-rare. Allow to rest for 10 minutes before slicing.

Cook the Vegetables
In a large skillet, heat olive oil over medium heat. Add onion, bell peppers, and sauté until softened. Add eggplant, zucchini, and tomatoes. Season with salt, pepper, and basil. Cook until the vegetables are tender.
Pesto Yukon Gold Mashed Potatoes

Prepare the Potatoes
Boil the Yukon Gold potatoes in salted water until tender. Drain and return to pot. Add butter and heavy cream, and mash until smooth.

Mix in Pesto
Stir in the pesto sauce and season with salt and pepper to taste.
Lemon Gastrique

Prepare the Balsamic Reduction
In a small saucepan, heat balsamic vinegar over medium heat. Simmer until it reduces to a thicker consistency, about 10-15 minutes.
