    Prepare the Pork Chops

    Season the bone-in pork chops with salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear the pork chops for 4-5 minutes on each side until golden brown. Remove from heat and let rest.

    Make Bourbon Whipped Sweet Potatoes

    Peel and chop the sweet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot. Add bourbon, butter, and marshmallows, then mash until smooth and creamy. Adjust seasoning with salt to taste.

    Prepare Braised Greens

    In a large pot, sauté greens in a little olive oil until wilted. Add stock, cover, and simmer for 15-20 minutes until tender. Season with salt and pepper to taste.

    Make the Whole Grain Mustard Demi

    In the same skillet used for the pork, pour in beef or vegetable stock, and whole grain mustard. Simmer until thickened, about 5-7 minutes. Adjust seasoning with salt and pepper.

    Plate the rested pork chop alongside bourbon whipped sweet potatoes and braised greens. Drizzle with whole grain mustard demi and top with additional marshmallows if desired.
