Wash the fresh spinach thoroughly and remove any tough stems. In a large pot, bring water to a boil and blanch the spinach for about 2 minutes until wilted. Drain and immediately transfer to an ice bath to stop the cooking process. Once cooled, drain again and squeeze out excess moisture. Chop the spinach coarsely.
