    Prepare the Steak

    Season the filet mignon steaks generously with salt and crush the black peppercorns. Press the crushed pepper onto both sides of the steaks.

    Sear the Steaks

    In a large skillet, heat the olive oil over medium-high heat. Add the steaks and sear for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove the steaks from the skillet and let them rest.

    Make the Sauce

    In the same skillet, reduce the heat to medium and add butter. Once melted, add the shallots and sauté until translucent. Carefully add the brandy and scrape up any browned bits from the bottom of the pan. Allow it to simmer for a couple of minutes.

    Stir in the heavy cream and simmer until the sauce thickens slightly. Season with salt to taste.
