    Prepare the Vegetables

    In a skillet, heat olive oil over medium heat. Add zucchini, bell pepper, carrot, and spinach. Sauté until vegetables are tender, about 5-7 minutes. Season with salt, pepper, and Italian seasoning.

    Cook the Noodles

    In a large pot, bring salted water to a boil. Add lasagna noodles and cook according to package instructions until al dente. Drain and set aside.

    Assemble the Lasagna

    In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Layer 4 lasagna noodles, half of the ricotta cheese, half of the sautéed vegetables, and a third of the mozzarella cheese. Repeat the layers, finishing with the remaining noodles, marinara sauce, and mozzarella cheese on top. Sprinkle parmesan cheese on the final layer.

    Bake the Lasagna

    Preheat the oven to 375°F (190°C). Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

    Allow the lasagna to cool for 10 minutes before slicing. Serve warm.
