Marinate the Chicken
In a large bowl, combine the buttermilk, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper. Add the chicken pieces to the marinade, making sure they are well coated. Cover and refrigerate for at least 4 hours or overnight for best flavor.

Prepare the Coating
In another bowl, mix together the all-purpose flour, salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.

Coat the Chicken
Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing the flour onto the chicken to ensure an even coating. Set aside on a wire rack.

Heat the Oil
In a large, deep skillet or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Carefully add the chicken pieces to the hot oil, making sure not to overcrowd the pan. Fry in batches for about 12-15 minutes, turning occasionally, until golden brown and the internal temperature reaches 165°F (75°C).

Remove the chicken from the oil and place it on a paper towel-lined plate to drain excess oil. Let it cool slightly before serving.
