Preparing the Pork

Cook the Pork
In a slow cooker, add the pork shoulder, tomatillos, onion, garlic, cilantro, chicken broth, salt, and pepper. Cook on low for 6-8 hours until the pork is tender.

Cook the Beef
In a separate slow cooker, combine the beef chuck roast, guajillo chilies (stems and seeds removed), onion, garlic, beef broth, salt, and pepper. Cook on low for 6-8 hours until the beef is tender.
Cooking the Rice

Prepare the Rice
In a pot, combine the long-grain rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and water is absorbed.
Assembling the Dish

Serve
Warm the corn tortillas in a skillet. Serve the slow-cooked pork and beef alongside the rice, allowing guests to fill their tortillas with the meats and rice.
