Corn Tortillas

    Prepare the masa

    In a large bowl, mix corn masa flour, water, and salt until a smooth dough forms.

    Form the tortillas

    Divide the dough into 8 equal balls. Use a tortilla press or a rolling pin to flatten each ball into a tortilla.

    Cook the tortillas

    Heat a dry skillet over medium-high heat. Cook each tortilla for about 1 minute on each side or until slightly charred. Keep warm in a towel.

Beef Adobada

    Prepare the guajillo sauce

    Remove stems and seeds from guajillo chiles. Soak them in hot water for 15 minutes until softened. Blend with garlic, cumin, vinegar, and water until smooth.

    Cook the beef

    Cut beef into bite-sized pieces. Season with salt and black pepper. In a skillet, heat a little oil over medium heat, add beef, and sear until browned. Add the guajillo sauce and simmer for 20-25 minutes until the beef is tender.

Assemble

    On each tortilla, place a generous amount of beef adobada, top with shredded mozzarella, and chopped romaine lettuce. Serve immediately.
