Prepare eggs
Crack 3 large eggs into a medium bowl. Add 2 tablespoons whole milk. Season with 1 teaspoon salt and 1 teaspoon freshly ground black pepper. Whisk vigorously until the mixture is uniform, slightly frothy, and pale yellow (about 20–30 seconds).

Preheat pan
Place a 8–10 inch nonstick or well-seasoned skillet over medium-low heat. Add 1/2 tablespoon of the unsalted butter and swirl until melted and coating the pan, about 30–45 seconds. The pan should be warm but not smoking; adjust heat if necessary.

Cook eggs
Pour the beaten egg mixture into the warm skillet. Let it sit, undisturbed, for about 10–15 seconds until the edges begin to set. Using a silicone spatula, gently pull the set edges toward the center, tilting the pan to allow uncooked egg to flow to the edges. Repeat this motion (pulling edges to center and tilting) until the surface is mostly set but still slightly glossy and moist (about 1–2 minutes total).

Add cheese
Sprinkle 1 ounce grated sharp cheddar evenly over one half of the omelet. If using, add 1/2 ounce grated gruyère or Swiss on top of the cheddar for extra creaminess.

Fold and finish
Using the spatula, gently fold the omelet in half over the cheese. Add the remaining 1/2 tablespoon unsalted butter around the folded omelet in the pan to melt and coat for shine. Cook for another 20–30 seconds for fully set but still tender eggs. Remove the pan from heat and let the omelet rest in the pan for 30 seconds to 1 minute to allow cheese to melt through.

Plate
Slide the omelet onto a warm plate. Optionally season with a small pinch of additional salt and pepper to taste. Serve immediately.

Toast bagel
While the omelet cooks, split 1 plain bagel and place it in a toaster or under a broiler cut-side up. Toast until golden and crisp on the cut sides (about 1–3 minutes depending on appliance).

Butter bagel
Spread 1 tablespoon softened unsalted butter evenly over the hot toasted bagel halves so it melts into the surface. Serve the toasted buttered bagel alongside the omelet.
