    Make the powdered mix

    In a medium bowl, sift together 0.25 cup unsweetened cocoa powder and 0.5 cup granulated sugar to remove lumps. Add 0.5 cup nonfat dry milk powder, 0.25 cup powdered milk (if using), 1 tablespoon cornstarch, and 0.25 teaspoon fine salt. Whisk vigorously until the mixture is homogeneous and there are no visible lumps. If using instant espresso powder, add 0.25 teaspoon and whisk to combine. Add 1 teaspoon vanilla extract and whisk briefly to distribute (the vanilla will be more effective when mixed into the drink but adding now gives aroma).

    Store the powder

    Transfer the prepared powdered mix into an airtight container or jar. Label with date. Stored in a cool, dry place, the mix will keep for 2–3 months. Shake or stir before each use to re-incorporate any settled ingredients.

    Prepare a single serving

    Pour 1 cup (240 ml) cold milk into a glass. Add 2 to 3 tablespoons of the homemade Nesquik powder (start with 2 tbsp for less sweet, 3 tbsp for a sweeter/chocolaty drink). Stir briskly with a spoon for 30–45 seconds until dissolved. For best incorporation, put powder in the glass first, add a small splash (1–2 tbsp) of milk to make a paste and stir to remove lumps, then add remaining milk and mix.

    Optional warm version

    For a hot chocolate-like drink, heat 1 cup milk in a small saucepan over medium-low until steaming (do not boil). Whisk in 2–3 tablespoons of the powder until fully dissolved. Remove from heat and serve immediately.

    Tips and adjustments

    Adjust sweetness by changing the sugar amount or powder per serving. For a creamier drink, use whole milk or substitute 1/4 cup milk + 3/4 cup half-and-half. For vegan version, replace dry milk powders with coconut milk powder and use plant-based milk for serving.
