Chill glass
Place a serving glass in the refrigerator or fill it with ice water for 2–3 minutes to chill while you prepare the soda.

Add the simple syrup and flavor extract or cordial to the chilled glass (or a mixing glass). If using fresh citrus juice, add it now. These concentrated ingredients provide the sweet and flavor base for the soda.

Gently add the ice to the glass (if using) to keep the soda cold. Pour 2 cups of cold carbonated water slowly over the back of a spoon or down the side of the glass to preserve carbonation.

Stir very gently with a long spoon or straw for about 5–8 seconds to combine the syrup, flavor, and carbonated water. Avoid vigorous stirring to prevent losing fizz.

Taste and adjust: if you want it sweeter, add up to 1 tablespoon more simple syrup; for a brighter acidity, add another 1/2–1 teaspoon citrus juice; for stronger flavor, add an extra 1/4–1/2 teaspoon extract or cordial.

Run the citrus wedge around the rim of the glass, then drop the wheel or wedge into the drink or perch it on the rim.

Slap the herb sprig between your palms once and tuck it into the glass to release the aromatic oils, or use it as a simple garnish on the rim.
