    Bring water to a simmer

    Pour 2 cups of cold water into a small saucepan or kettle. Heat until water reaches a near-boiling simmer (about 200–212°F / 93–100°C). If using ginger, add the sliced ginger to the water as it heats so the spice infuses.

    Steep the tea

    Remove the water from direct heat. Place 2 black tea bags (or 2 tsp loose-leaf tea in an infuser) into the hot water. Cover and steep for 3–5 minutes depending on desired strength (3 minutes for lighter, 5 minutes for stronger). If using ginger, leave it in while steeping.

    Finish and sweeten

    After steeping, remove the tea bags or strain out loose leaf and ginger slices. Stir in honey or sugar (about 1 tsp) if desired until dissolved. Add milk or creamer (about 2 tbsp) if you prefer milky tea. Squeeze a lemon slice into the cup or add a slice for a bright finish if desired.

    Serve

    Pour the hot tea into cups. Taste and adjust sweetness, milk, or lemon to suit. Serve immediately while hot.
