Prep chicken
Trim any excess fat from the chicken breasts and slice each breast horizontally into 3–4 thin cutlets (about 1/4-inch thick) so they cook evenly. Pat dry with paper towels.

Heat a large skillet or grill pan over medium-high heat. When hot, add a tablespoon of oil (or nonstick spray). Add chicken in a single layer without crowding; cook 2–3 minutes per side until nicely browned and cooked through (internal temperature 165°F / 74°C). Work in batches if needed.

Warm the flour tortillas for easier rolling: wrap stacked tortillas in foil and heat in a 350°F (175°C) oven for 5–8 minutes, or microwave one at a time for 15–20 seconds covered with a damp paper towel.

Lay a warmed tortilla flat on a clean work surface. Spread about 2 tablespoons of ranch dressing down the center lengthwise of each tortilla (adjust to taste).

Place an even portion of shredded lettuce (about 1/2 cup) on top of the ranch. Add 3–4 slices of tomato across the center, then a generous 3–4 ounces (about 3/4 cup) of the Buffalo chicken. If using, sprinkle about 2 tablespoons of shredded cheddar cheese over the chicken.

To fold: fold the bottom edge up over the filling, fold the two sides in toward the center, then roll tightly from bottom to top to form a compact wrap. Repeat for remaining tortillas.

Optional — grill the assembled wraps: heat a clean skillet or panini press over medium heat. Place wraps seam-side down and toast 1–2 minutes per side until golden and sealed. This step warms the lettuce slightly and melds flavors, but is optional if you prefer a cold wrap.

Cut each wrap in half on the diagonal. Plate with a 4 oz portion of potato chips and a whole banana on the side (or substitute chips with fries if preferred).

Serve immediately while the chicken is warm, with extra ranch dressing on the side if desired.
