Wash and core apples
Thoroughly wash the apples under cool running water to remove any wax or residue. Core the apples and cut into quarters. Peeling is optional; leaving the peel adds nutrients and flavor but can slightly increase cloudiness.

Blend apples
Place the chopped apples and 1 cup filtered water into a high-speed blender or food processor. Blend on high until the mixture is very smooth, about 45–60 seconds. If the blender struggles, pause and stir, then continue in short bursts.

Heat (optional for clearer juice)
For a clearer, shelf-stable flavor or to extract more juice, transfer the blended apple puree to a medium saucepan and heat gently over low–medium heat until it reaches a simmer (not a rapid boil), about 5–8 minutes, stirring frequently. Remove from heat and let it cool slightly. Heating is optional for a fresh, raw juice.

Strain
Place a fine-mesh sieve lined with cheesecloth, nut milk bag, or a clean kitchen towel over a large bowl or pitcher. Pour the blended (and optionally heated) apple mixture into the lined sieve. Let it drain naturally for several minutes, then gather the cloth and gently squeeze to extract as much juice as possible. You should collect approximately 1 to 1 1/4 cups of juice from 3 cups of apples.

Adjust sweetness and acidity
Stir 1 tablespoon fresh lemon juice into the strained juice to brighten the flavor and prevent oxidation. Taste the juice. If you prefer it sweeter, dissolve up to 1 teaspoon granulated sugar into a tablespoon of warm water and stir into the juice. Alternatively, add more lemon if it tastes too sweet.

Add spice (optional)
If desired, stir in up to 1 teaspoon ground cinnamon for a warm note. Start with 1/4–1/2 teaspoon and adjust to taste; cinnamon will alter clarity and mouthfeel.

Adjust concentration
If the juice is too intense, dilute with up to 1/2 cup cold filtered water, adding a little at a time until you reach your preferred strength. Chill before serving.
