    Prep vegetables

    Finely dice the yellow onion and red bell pepper. Slice the mushrooms and roughly chop the spinach. Measure and set aside the shredded cheddar and chopped chives.

    Beat eggs

    Crack 3 large eggs into a medium bowl. Add 2 tsp whole milk, 1 tsp salt, and 1 tsp black pepper. Whisk vigorously until thoroughly combined and slightly frothy (about 20–30 seconds).

    Sauté vegetables

    Heat a nonstick skillet over medium heat. Add 1 tsp olive oil. When shimmering, add the diced onion and red bell pepper and sauté 2–3 minutes until softened. Add sliced mushrooms and cook 1–2 more minutes until they release moisture. Add chopped spinach and stir until wilted, about 30 seconds. Season lightly with a pinch of salt and pepper. Transfer the cooked vegetables to a small bowl and wipe the skillet clean with a paper towel.

    Cook omelet base

    Reduce heat to medium-low and place the skillet back on the burner. Add 1 tbs unsalted butter and let it melt and foam but not brown. Pour the beaten eggs evenly into the skillet, tilting to spread. Let the eggs set undisturbed for about 30–45 seconds until the edges begin to set.

    Create layers

    Using a heatproof spatula, gently pull the set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. When the top is still slightly runny but the surface mostly set (about 45–60 seconds more), sprinkle the cooked vegetables evenly over one half of the omelet, then top with 1/2 cup shredded cheddar and 1 tsp chopped chives.

    Fold and finish

    Carefully fold the empty half of the omelet over the filled half using the spatula. Let cook 30–45 seconds to melt the cheese and finish setting the eggs. If you prefer the omelet fully set, cover the skillet for 30 seconds. Slide the omelet onto a plate and let rest 30 seconds before serving.

Toasted Bagel

    While the omelet cooks (or just before), split the bagel and toast to desired doneness in a toaster or under a broiler. Spread 1 tbs softened unsalted butter on the hot bagel halves so it melts into the surface. Serve the toasted buttered bagel alongside the omelet.
