    Extracting coconut water (if using whole young coconuts)

    If using fresh young coconuts: hold the coconut steady, shave the top husk with a cleaver or heavy knife until you reach the hard shell, tap a small hole through the shell with the tip of the cleaver or a screwdriver, then pour out and measure 2 cups of the clear coconut water. Strain through a fine mesh sieve into a measuring cup to remove any bits of shell or husk.

    If using bottled coconut water: pour 2 cups of chilled coconut water into a pitcher.

    Add 1 cup of ice cubes to a serving pitcher or individual glasses and pour the coconut water over the ice to chill quickly.

Optional Enhancements

    Lightly sweetened & brightened

    If you prefer a slightly sweetened or brighter flavor, add 1 tsp honey or agave and 1 tbs fresh lime juice to the chilled coconut water. Stir until the honey dissolves (warm a little honey in a spoon over hot water if necessary).

    Herbal & spicy variation

    For a refreshing herbal touch, clap 6 mint leaves between your palms to release the oils and add to the pitcher. For a gentle spicy note, grate 1 tsp fresh ginger and whisk into the coconut water. Add a pinch (about 1/8 to 1/4 tsp) of sea salt to enhance electrolytes and flavor balance.

    Taste and adjust: sample the coconut water and adjust lime, sweetener, ginger, or salt to your preference. Serve immediately over ice in glasses, optionally garnished with a lime wedge or a sprig of mint.
