Prepare the Egg Mixture
In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined and slightly frothy.

Cook the Omelet
In a non-stick skillet, melt the butter over medium heat. Pour the egg mixture into the skillet, tilting to spread it evenly. Cook until the edges begin to set, about 2-3 minutes.

Add the Fillings
Once the eggs are set on the bottom, add the slow-roasted corned beef and Swiss cheese on one half of the omelet.

Fold and Finish
Carefully fold the other half of the omelet over the filling. Cook for another 1-2 minutes until the cheese is melted and the eggs are fully cooked.
