Prepare the Grits
In a medium saucepan, bring the chicken broth to a boil. Gradually whisk in the stone-ground grits, reduce heat to low, and simmer until thickened, about 20-25 minutes. Stir in 2 tablespoons of butter and season with salt and black pepper.

Cook the Sausage and Vegetables
In a large skillet, heat the olive oil over medium heat. Add the Andouille sausage and cook until browned, about 5 minutes. Add the diced bell pepper, onion, and minced garlic, cooking until the vegetables are softened, about 5-7 minutes.

Sauté the Shrimp
Add the shrimp to the skillet, along with cayenne pepper, salt, and black pepper. Cook until the shrimp are pink and cooked through, about 3-5 minutes. Remove from heat and stir in the remaining 2 tablespoons of butter.

Serve
To serve, spoon the creamy grits into bowls and top with the sautéed shrimp and sausage mixture. Garnish with chopped green onions if desired.
