1. Prepare the Chicken
In a large bowl, season the chicken wings with salt, black pepper, and hot sauce. Mix well and let marinate for at least 30 minutes.
2. Heat the Bacon Fat
In a large pot, heat the bacon fat over medium-low heat. Add minced garlic and fresh thyme leaves to the pot.
3. Cook the Wings
Once the garlic is fragrant, carefully add the marinated chicken wings into the pot. Make sure they are submerged in the bacon fat.
4. Confit the Wings
Allow the wings to cook gently for about 45 minutes, turning them occasionally until they are tender and fully cooked.
5. Crisp the Wings
After the wings are cooked, remove them from the pot and let them drain on a paper towel. Heat the remaining bacon fat in a deep fryer or a heavy skillet to 375°F (190°C). Fry the wings in batches until they are golden brown and crispy, about 5-7 minutes.
6. Serve
Remove the wings from the fryer and let them drain on paper towels again. Serve hot with additional hot sauce on the side.
