Preparation and Assembly

Prepare the Beef

Preheat your oven to 300°F (150°C). Rub the beef chuck roast with olive oil, salt, black pepper, garlic powder, and onion powder. Place the roast in a roasting pan.

Roast the Beef

Cover the roasting pan with foil and roast in the preheated oven for about 3 to 4 hours, or until the beef is tender and easily shreds with a fork. Check occasionally and add beef broth or water if it starts to dry out.

Cook the French Fries

While the beef is roasting, cook the French fries according to package instructions or to your liking if using fresh fries. Ensure they are golden and crispy.

Shred the Beef

Once the beef is cooked, remove it from the oven and let it rest for 10 minutes. Shred the beef using two forks.

Assemble the Dish

On a serving plate, layer the cooked French fries, top with shredded beef, sprinkle with sharp cheddar cheese, jalapeños, drizzle with BBQ sauce, and add a dollop of sour cream. Finally, garnish with chopped scallions.
