Prepare the coleslaw

In a large bowl, combine coleslaw mix, mayonnaise, vinegar, sugar, salt, and black pepper. Toss well to combine. Cover and refrigerate until serving.

Prepare the frying station

Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for panko breadcrumbs. Season the flour with salt and black pepper.

Bread the walleye

Dredge each walleye fillet in the seasoned flour, shaking off excess. Dip into the beaten eggs, allowing any excess to drip off, then coat thoroughly with panko breadcrumbs.

Heat the oil

In a large skillet, heat vegetable oil over medium-high heat until shimmering.

Fry the walleye

Once the oil is hot, carefully add the breaded walleye fillets to the skillet. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and place on paper towels to drain excess oil.

Cook the french fries

Prepare french fries according to package instructions while the walleye is frying.

Serve

On each plate, serve a fried walleye fillet with a side of french fries, a generous spoonful of tartar sauce, a lemon wedge, and a portion of coleslaw.
