Method
Preparing the Bourbon Sauce

Make the Bourbon Sauce
In a saucepan, combine bourbon, brown sugar, soy sauce, minced garlic, and Dijon mustard. Bring to a boil over medium heat.

Thicken the Sauce
In a small bowl, mix cornstarch and water until smooth. Slowly add to the boiling sauce while stirring continuously. Cook until the sauce thickens, then remove from heat.
Grilling the Salmon

Season the Salmon
Season the salmon fillets with salt and black pepper on both sides.

Glaze the Salmon
During the last few minutes of grilling, brush the bourbon sauce over the salmon to glaze it.

Roast the Vegetables
Preheat the oven to 400°F (200°C). Toss broccoli and sliced carrots with olive oil, salt, and black pepper. Spread them out on a baking sheet and roast for about 20 minutes until tender and slightly caramelized.
