Cooking the Pasta

Boil the Water
In a large pot, bring 4-6 quarts of water to a rolling boil. Add 1 teaspoon of salt to the water.

Cook the Pasta
Add 8 oz of pasta to the boiling water. Cook according to the package instructions, usually about 8-10 minutes, until al dente. Stir occasionally to prevent sticking.

Drain the Pasta
Once cooked, drain the pasta in a colander and set aside, reserving a cup of pasta water.
Preparing the Vegetables

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Add Vegetables
Add zucchini, bell pepper, cherry tomatoes, carrot, and broccoli florets to the skillet. Sauté for about 5-7 minutes until vegetables are tender but still crisp.

Season the Vegetables
Sprinkle in 1 teaspoon of Italian seasoning, 1 teaspoon of black pepper, and stir well to combine.

Combine Pasta and Vegetables
Add the drained pasta to the skillet with the sautéed vegetables. Toss to combine.

Add Cheese and Basil
Sprinkle in 1 cup of grated Parmesan cheese and 0.5 cup of chopped fresh basil. If needed, add a bit of the reserved pasta water to help combine the ingredients and create a light sauce.

Toss everything together until well mixed. Serve warm, garnished with additional Parmesan cheese and fresh basil if desired.
