Prepare the Filling
In a large mixing bowl, combine the shredded chicken, black beans, corn, diced red bell pepper, chopped green onion, shredded cheddar cheese, and spicy taco seasoning. Mix well until all ingredients are thoroughly combined.

Assemble Egg Rolls
Lay an egg roll wrapper on a clean surface, with one corner pointing towards you. Place about 2-3 tablespoons of the filling mixture onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll it tightly away from you. Seal the edge with a little water. Repeat for all wrappers.

Fry the Egg Rolls
Heat oil in a deep frying pan over medium heat. Once hot, carefully place the egg rolls in the oil, a few at a time. Fry for about 3-4 minutes on each side, or until golden brown. Remove and drain on paper towels. Keep warm.

Make the Sauce
In a small bowl, combine the ranch dressing and Cajun seasoning. Stir well until the seasoning is fully incorporated into the dressing. Adjust seasoning to taste.
