    Prepare the Seafood

    Rinse the shrimp under cold water and pat them dry with paper towels. If using fresh crab, ensure it is cooked and flaked.

    Chop the Vegetables

    Dice the potatoes, celery, carrot, and onion into small, even pieces. Mince the garlic cloves.

Cooking

    Sauté the Vegetables

    In a large pot over medium heat, add a bit of oil (optional) and sauté the chopped onions, celery, carrots, and garlic until the onions are translucent, about 5 minutes.

    Add Potatoes and Broth

    Stir in the diced potatoes and chicken broth. Add the bay leaves, thyme, salt, black pepper, and red pepper flakes. Bring to a boil, then reduce the heat and simmer for about 15 minutes or until the potatoes are tender.

    Add Seafood and Cream

    Add the shrimp and crab meat to the pot. Pour in the heavy cream and white wine. Stir gently and cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.

Serving

    Garnish and Serve

    Remove the bay leaves from the chowder. Ladle the seafood chowder into bowls, garnish with chopped parsley, and serve with lemon wedges on the side.
