Dough Preparation

Activate Yeast
In a small bowl, combine warm water (1.5 cups) and sugar (1 tbsp). Sprinkle the yeast over the water and let it sit for about 5-10 minutes until frothy.

Make the Dough
In a large bowl, combine the flour (4 cups) and salt (1 tsp). Add the yeast mixture and melted butter (2 tbsp) to the dry ingredients. Mix until a dough forms.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preheat Oven
Preheat your oven to 450°F (232°C) and line two baking sheets with parchment paper.

Shape the Pretzels
After the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches) and shape it into a pretzel.

Prepare Baking Solution
In a large pot, bring the water (10 cups) to a boil. Add the baking soda (0.5 cups) carefully.

Boil the Pretzels
Boil each pretzel in the baking solution for 30 seconds on each side. Remove and place on the prepared baking sheets.

Bake
Sprinkle coarse salt on top of the pretzels and bake in the preheated oven for 12-15 minutes or until golden brown.

Add Milk
Slowly add the milk (1 cup) while whisking to prevent lumps. Keep stirring until the mixture thickens.

Add Cheese and Seasoning
Remove from heat and stir in the cheddar cheese (2 cups), salt (0.5 tsp), and black pepper (0.25 tsp) until the cheese is melted and smooth.
