Pasta Preparation
- 1
Cook the Spaghetti
In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Drain and set aside.
Chicken Preparation
- 2
Grill the Chicken
Season the chicken breasts with olive oil, garlic powder, salt, and black pepper. Preheat a grill or grill pan over medium heat. Grill chicken for 6-7 minutes on each side or until fully cooked. Remove from grill and let rest before slicing.
Vegetable and Sauce Preparation
- 3
Sauté the Vegetables
In a large skillet, melt butter over medium heat. Add chopped red onions and cook for 2-3 minutes until softened. Add cherry tomatoes and black olives, and cook for another 3-4 minutes until tomatoes start to burst.
- 4
Add the White Wine
Pour in white wine and let it simmer for 3-4 minutes to allow the alcohol to cook off and the sauce to reduce slightly.
- 5
Combine Ingredients
Add the sliced grilled chicken to the skillet along with chopped parsley and parmesan cheese. Stir well to combine and remove from heat.
Garlic Bread Preparation
- 6
- 7
Bake the Garlic Bread
Place the bread on a baking sheet and bake for 10-12 minutes or until golden and crispy. Remove from oven and let cool slightly before slicing.
Final Assembly
- 8
Combine Pasta and Sauce
In a large serving bowl, combine the cooked spaghetti with the chicken and vegetable sauce. Toss gently to coat the pasta evenly.
- 9
Serve
Serve the Mediterranean pasta warm with slices of garlic bread on the side.
