Prepare the Tater Tots

    Bake the Tater Tots

    Preheat your oven to 425°F (220°C). Spread the frozen tater tots evenly on a baking sheet and bake for 25-30 minutes, or until golden brown and crispy.

Make the Cheese Sauce

    Melt the Butter

    In a medium saucepan over medium heat, melt the butter.

    Create the Roux

    Add the all-purpose flour to the melted butter and whisk together for about 1-2 minutes until it forms a paste.

    Slowly pour in the milk while continuing to whisk to avoid lumps. Cook for another 3-5 minutes until the mixture thickens.

    Add Cheeses

    Stir in the cheddar cheese and cream cheese, mixing until fully melted and smooth. Season with salt and black pepper to taste.

Cook the Eggs

    In a bowl, whisk the eggs until well combined. In a skillet over medium heat, scramble the eggs until fully cooked, about 3-4 minutes.

Assemble the Totchos

    On a serving platter, layer the baked tater tots, followed by the cheese sauce, scrambled eggs, crumbled bacon, shredded Monterey Jack cheese, and sliced jalapeños.
