    Prepare the Ingredients

    Chop the diced tomatoes, bell peppers, and onion. Set aside.

    Whisk the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper until fully combined.

    Cook the Vegetables

    In a non-stick skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add the chopped onion and bell peppers, and sauté for 3-4 minutes until softened.

    Add Tomatoes

    Stir in the diced tomatoes and cook for an additional 2 minutes.

    Cook the Omelette

    Pour the whisked eggs over the vegetable mixture. Let it cook for about 2-3 minutes until the edges start to set. Sprinkle the cheese on top and cover the skillet with a lid. Cook for another 2-3 minutes until the cheese is melted and the eggs are fully set.

    Gently slide the omelette onto a plate and cut it in half if desired.
