Prepare the Onions
Slice the yellow onions thinly and set aside.

Mince the Garlic
Peel and mince the garlic cloves.

Add Broth and Seasonings
Pour in the beef broth and add thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes.

Prepare Toppings
While the soup is simmering, preheat the broiler in your oven. If using gluten-free croutons, prepare them according to package instructions.

Serve Soup
Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top with provolone and parmesan cheese.

Broil Until Golden
Place the bowls under the broiler for about 3-5 minutes, until the cheese is bubbly and golden brown.

Remove from the oven and let cool slightly before serving. Top with croutons (if using) and serve hot.
