    Prepare the Onions

    Slice the yellow onions thinly and set aside.

    Mince the Garlic

    Peel and mince the garlic cloves.

Cooking

    Sauté Onions

    In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 25-30 minutes.

    Add Garlic

    Once the onions are caramelized, add the minced garlic and cook for an additional 1-2 minutes, until fragrant.

    Add Broth and Seasonings

    Pour in the beef broth and add thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes.

    Prepare Toppings

    While the soup is simmering, preheat the broiler in your oven. If using gluten-free croutons, prepare them according to package instructions.

    Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top with provolone and parmesan cheese.
