Directions

- 2
Soak the Potatoes
Soak the potato strips in a bowl of cold water for at least 30 minutes. This step helps to further remove starch and results in a better texture.
- 3
Dry the Potatoes
After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels. Ensuring they are dry will prevent splattering when frying.
- 4
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature for frying.
- 5
Fry the Potatoes (First Fry)
Carefully add a batch of the dried potato strips to the hot oil. Fry for about 4-5 minutes until they are soft but not browned. Remove them from the oil and place them on a paper towel-lined plate to drain.
- 6
Cool the Potatoes
Let the first batch of fries cool for about 15-20 minutes. This step is crucial for achieving a crispy texture.
- 7
Fry the Potatoes (Second Fry)
Increase the oil temperature to 375°F (190°C). Fry the cooled potato strips again for about 3-4 minutes or until golden brown and crispy. Remove them from the oil and drain on paper towels.
- 8
Season the Fries
While the fries are still hot, sprinkle them generously with salt, black pepper, and paprika (if using). Toss to coat evenly.
- 9
Serve
Transfer the fries to a serving plate and enjoy immediately with your favorite dipping sauces.
