Cooking the Rice

Prepare the Rice
In a medium saucepan, combine 1 cup of long-grain white rice, 2 cups of water, and 1 tsp of salt. Bring to a boil over medium-high heat.

Simmer
Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes or until the rice is tender and the water is absorbed.

Sautéing Vegetables

Heat the Oil
In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Sauté the Onions and Peppers
Add 1 diced medium onion and 1 diced medium red bell pepper to the skillet. Sauté for about 5 minutes or until the onions are translucent.

Add Remaining Ingredients
Stir in 1 cup of frozen corn, 1 cup of drained and rinsed black beans, 1 tsp of cumin, and 1 tsp of chili powder. Cook for an additional 5 minutes, stirring occasionally.
Combining Flavors

Mix Rice and Vegetables
Add the cooked rice to the skillet with the sautéed vegetables. Gently stir to combine everything.

Add Lime and Cilantro
Stir in 1 cup of chopped cilantro and 2 tablespoons of lime juice. Season with salt and pepper to taste.

Remove from heat and serve the Fiesta Rice warm, garnished with additional cilantro or lime wedges if desired.
