Chili Preparation

    Cook the Meat

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Sauté Vegetables

    Add the diced onion, minced garlic, and diced red bell pepper to the pot. Sauté until the vegetables are soft, about 4-5 minutes.

    Add Tomatoes and Beans

    Stir in the canned diced tomatoes, kidney beans, and black beans. Mix well to combine.

    Season the Chili

    Add the chili powder, ground cumin, salt, and black pepper to the pot. Stir well and bring the mixture to a gentle simmer.

    Simmer the Chili

    Reduce the heat to low and let the chili simmer uncovered for 20-30 minutes, stirring occasionally. This will allow the flavors to meld together.

Serving

    Prepare the Toppings

    While the chili is simmering, prepare your toppings by shredding the cheddar cheese, slicing the green onions, and setting out the sour cream and tortilla chips.

    Serve

    Ladle the chili into bowls and top with shredded cheddar cheese, a dollop of sour cream, and sliced green onions. Serve with tortilla chips on the side.
