Method

Preparation of Ingredients

  1. 1

    Wash and Prepare Vegetables

Thoroughly wash the mixed greens, cherry tomatoes, and cucumber. Slice the cucumbers into thin rounds and halve the cherry tomatoes.

  2. 2

    Cook the Bacon

In a skillet over medium heat, cook the smoked bacon until crispy. Remove from skillet and place on paper towels to drain excess fat. Once cooled, crumble the bacon.

  3. 3

    Prepare Hard Boiled Eggs

Place the eggs in a pot and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 10-12 minutes. Drain and cool in ice water. Once cool, peel and chop into quarters.

  4. 4

    Prepare Turkey and Cheese

If using leftover turkey, dice it into small pieces. Grate or cube the cheddar cheese.

Assembling the Salad

  1. 5

    Combine Salad Ingredients

In a large salad bowl, add the mixed greens, diced turkey, halved cherry tomatoes, sliced cucumbers, crumbled bacon, and black olives.

  2. 6

    Add Cheese and Eggs

Sprinkle the grated cheddar cheese over the top of the salad. Arrange the quartered hard boiled eggs on top.

Making the Dressing

  1. 7

    Prepare the Dressing

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper until well combined.

  2. 8

    Dress the Salad

Drizzle the dressing over the assembled salad and toss gently to combine everything together.
