For the Chicken

For the Mashed Potatoes

Method

Prepare the Chicken

  1. 1

    Season the Chicken

In a bowl, mix together olive oil, garlic powder, paprika, salt, and black pepper. Rub the mixture all over the chicken breasts.

  2. 2

    Grill the Chicken

Preheat the grill to medium-high heat. Grill the chicken breasts for 6-7 minutes on each side or until fully cooked and juices run clear. Remove from grill and set aside.

Make the Crab Imperial

  1. 3

    Prepare the Crab Mixture

In a bowl, combine crab meat, mayonnaise, Dijon mustard, Old Bay seasoning, beaten egg, chopped green onion, and lemon juice. Mix gently to avoid breaking up the crab meat.

  2. 4

    Top the Chicken

Spoon the crab mixture generously over each grilled chicken breast. Sprinkle shredded cheddar cheese on top.

  3. 5

    Bake

Place the chicken breasts on a baking sheet and bake in a preheated oven at 350°F (175°C) for about 15 minutes or until the cheese is melted and bubbly.

Prepare the Mashed Potatoes

  1. 6

    Boil the Potatoes

In a large pot, add the cubed potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain well.

  2. 7

    Mash the Potatoes

Return the drained potatoes to the pot. Add butter, milk, salt, and black pepper. Mash until creamy and smooth.

Cook the Seasonal Vegetables

  1. 8

    Sauté the Vegetables

In a skillet, heat olive oil over medium heat. Add mixed vegetables, season with salt and black pepper, and sauté for about 5-7 minutes until tender but still crisp.

Serve

  1. 9

    Plate the Dish

On each plate, serve a grilled chicken breast topped with crab imperial and melted cheese alongside a generous helping of mashed potatoes and sautéed seasonal vegetables.
