Preparing the Filling

Season the Chicken
In a mixing bowl, combine the shredded cooked chicken with taco seasoning. Mix well to ensure the chicken is evenly coated.

Combine with Cheese
Add the shredded cheese to the seasoned chicken and mix until fully combined.
Assembling the Quesadilla

Heat the Oil
In a large skillet, heat 1 tablespoon of cooking oil over medium heat.

Fill the Tortilla
Place one tortilla in the skillet. Spread half of the chicken and cheese mixture evenly over the tortilla. Top with another tortilla.

Cook the Quesadilla
Cook for about 3-4 minutes until the bottom tortilla is golden brown. Carefully flip the quesadilla and add the remaining tablespoon of oil if needed, cooking for an additional 3-4 minutes until the other side is golden and the cheese is melted.

Remove and Cut
Once cooked, remove the quesadilla from the skillet and let it rest for a minute. Cut into wedges.

Prepare the Toppings
While the quesadilla is cooling, prepare the toppings by chopping the lettuce and tomato, and arranging the sour cream, jalapeños, and salsa on a serving plate.

Serve the quesadilla wedges with shredded lettuce, diced tomato, a dollop of sour cream, sliced jalapeños, and a side of salsa for dipping.
