Pulled BBQ Chicken

    Cook the Chicken

    Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and black pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center.

    Shred the Chicken

    Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes. Use two forks to shred the chicken into bite-sized pieces.

    Mix with BBQ Sauce

    In the same skillet, add the shredded chicken back in and pour the BBQ sauce over it. Stir well to combine and let it cook for an additional 3-5 minutes until heated through.

    Prepare the Bread

    Butter one side of each slice of sourdough bread.

    Assemble the Sandwich

    On the unbuttered side of two slices of bread, layer pulled BBQ chicken, a slice of cooper sharp cheese, and two slices of cooked bacon. Top with the remaining slices of bread, buttered side up.

    Grill the Sandwich

    Heat a skillet over medium heat. Place the assembled sandwiches in the skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

    Serve

    Remove the sandwiches from the skillet, cut them in half, and serve warm.
