Prepare Home Fries

    Cook the Potatoes

    Wash and dice the potatoes into small cubes. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes and season with salt, black pepper, and paprika. Cook for about 15-20 minutes, stirring occasionally until the potatoes are golden brown and crispy.

Cook Breakfast Meat

    Fry the Bacon or Sausage

    In another skillet, over medium heat, cook the bacon slices until crispy, about 4-5 minutes on each side. If using sausage patties, cook them in the same manner until browned and cooked through, about 5-6 minutes on each side.

Prepare Eggs and Bagel

    Cook the Eggs

    In a bowl, crack the eggs and whisk them until well combined. In a non-stick skillet, pour in the whisked eggs and cook over medium-low heat. Stir gently with a spatula until the eggs are softly scrambled and just set, about 3-4 minutes.

    Toast the Bagels

    While the eggs are cooking, slice the bagels in half and toast them until golden brown.

    Assemble the Sandwich

    On the bottom half of each toasted bagel, place a slice of American cheese, followed by your choice of breakfast meat (bacon or sausage), and then spoon the scrambled eggs on top. Place the top half of the bagel over the filling.
