Prepare the Chicken
Season the chicken breasts with salt, black pepper, garlic powder, and paprika. Set aside.

Breading Procedure
In three separate shallow dishes, place the flour in the first, beaten eggs in the second, and breadcrumbs in the third. Dredge each chicken breast in flour, dip in the eggs, and coat with breadcrumbs.

Fry the Chicken
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken breasts. Fry for about 5-7 minutes per side or until they are golden brown and cooked through. Remove from the skillet and place on a paper towel to drain excess oil.

Toast the Buns
While the chicken is cooling, lightly toast the brioche buns on a skillet or in a toaster until golden brown.

Assemble the Sandwich
On the bottom half of each toasted brioche bun, place a handful of fresh arugula or spinach. Add the fried chicken breast on top, followed by crumbled bleu cheese and shredded mozzarella cheese. Drizzle with balsamic reduction, then place the top half of the bun on.
