Preparation of Salsa

    Make the Salsa

    Dice the tomatoes and red onion. Remove the seeds from the jalapeño and finely chop it. In a bowl, combine the diced tomatoes, red onion, chopped jalapeño, and cilantro. Add salt to taste and mix well. Set aside.

Avocado Preparation

    Prepare the Avocado

    Cut the ripe avocados in half, remove the pit, and scoop the flesh into a bowl. Add lime juice, salt, and black pepper. Mash with a fork until you achieve a creamy consistency. Set aside.

Cooking the Eggs

    Fry the Eggs

    In a skillet, heat olive oil over medium heat. Crack the eggs into the skillet and fry until the whites are set but the yolks remain runny, about 3-4 minutes. Remove from heat.

Toast Assembly

    Toast the Bread

    Toast the multigrain bread slices until golden brown and crispy.
