Gather Ingredients
Collect all the ingredients on a clean countertop to ensure you have everything ready for assembly.

Toast the Bread (Optional)
If desired, lightly toast the slices of rye bread in a toaster or on a skillet until golden brown.
Assembly

Spread Dijon Mustard
Spread 1 tablespoon of Dijon mustard evenly on one side of each slice of rye bread.

Layer Pastrami and Cheese
On one slice of bread (with mustard side up), layer the 0.25 pound of thinly sliced pastrami evenly, then place the 2 slices of Swiss cheese on top.

Add Pickles and Optional Ingredients
Place 2 slices of pickles on top of the cheese. If using, add 1 tablespoon of sauerkraut, a few dashes of hot sauce, and freshly cracked black pepper to taste.

Complete the Sandwich
Top with the second slice of bread, mustard side down, to complete the sandwich.
Serving

Slice and Serve
Cut the sandwich in half diagonally and serve immediately. Enjoy your Pacific Pastrami!
