Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes.

    While the quinoa is cooking, chop the carrots, bell peppers, zucchini, and red onion into bite-sized pieces. Halve the cherry tomatoes and set aside.

    Open the can of chickpeas and rinse them under cold water in a colander. Set aside to drain.
